If you love homemade sourdough but sometimes feel like baking bread takes over the entire kitchen, this Two Loaf Pan Sourdough Method is exactly what you need. Instead of trying to manage one free-form boule at a time, this method turns one batch of dough into two beautifully shaped loaves that bake neatly in standard loaf pans. Using loaf pans makes sourdough much more forgiving. The pans support the dough during its final rise, reduce the need for complicated shaping, and make it easier to get evenly sized slices. It is an especially useful method for beginners, busy home bakers, and anyone who wants reliable sourdough bread without the chaos. This recipe produces two soft, flavorful loaves with a lightly crisp crust and a tender interior. The bread is excellent for toast, sandwiches, French toast, grilled cheese, or simply spreading with butter while it is still slightly warm. Why the Two-Loaf Method Works So Well Traditional sourdough baking often involves bannetons, Dutch ovens, scoring patterns, steam, and careful shaping. While those techniques can produce beautiful artisan loaves, they are not always convenient. Loaf pans simplify the process. The pan provides structure while the dough proofs and bakes. You do not need to worry as much about the dough spreading sideways, and there is no need to transfer a delicate loaf into a preheated Dutch oven. Making two loaves at once also saves time. You mix, ferment, divide, shape, proof, and bake one batch rather than repeating the entire process twice. You can enjoy one loaf immediately and freeze the second for another day. Ingredients For Two Loaves 200g active sourdough starter 700g lukewarm water 1,000g bread flour 20g fine sea salt 30g honey or maple syrup 30g olive oil or melted unsalted butter For the Loaf Pans Soft butter or oil for greasing Optional: a small amount of flour or parchment paper These quantities make approximately two medium-sized sandwich loaves. Choosing the Right Loaf Pans For this recipe, two standard loaf pans work best. A pan around 8½ x 4½ inches or 9 x 5 inches is suitable. The exact pan size will affect the height and shape of your bread. Smaller pans create taller loaves, while larger pans produce broader, lower loaves. Grease the pans thoroughly before adding the dough. If your pans tend to stick, line the bottom with parchment paper after greasing. Step 1: Prepare Your Sourdough Starter For the best rise, use a healthy, active sourdough starter. Feed your starter according to your normal schedule and allow it to become bubbly, active, and noticeably expanded before beginning the recipe. A starter that is active and ready to bake with should have plenty of bubbles and a pleasant fermented aroma. The timing depends on your room temperature, flour, feeding ratio, and starter strength. Do not rely only on the clock. Watch the starter itself. Step 2: Mix the Dough Add the active sourdough starter and lukewarm water to a large mixing bowl. Stir until the starter is mostly dispersed throughout the water. Add the bread flour and mix with a wooden spoon, dough whisk, or your hands. Continue mixing until there are no obvious patches of dry flour. The dough may look rough at this stage. That is completely normal. Cover the bowl and let the dough rest for approximately 30 minutes. This short resting period gives the flour time to absorb the water and makes the dough easier to work with. Step 3: Add Salt, Honey, and Fat After the initial rest, add the salt, honey, and olive oil or melted butter. Work the ingredients into the dough using wet hands. Pinch and fold the dough repeatedly until everything is evenly distributed. The dough should gradually become smoother and more cohesive. You do not need to knead it aggressively. Sourdough dough benefits from gentle strengthening throughout the fermentation process. Step 4: Build Strength With Stretch-and-Folds During the first two hours of bulk fermentation, perform a series of stretch-and-folds. Every 30 minutes, grab one side of the dough, gently stretch it upward, and fold it toward the center. Rotate the bowl and repeat on all four sides. One complete round takes only a minute or two. Repeat this process approximately four times. As the dough develops strength, it should become smoother, more elastic, and easier to handle. If the dough already feels strong after several rounds, you can reduce the amount of handling. Step 5: Bulk Fermentation After your stretch-and-folds are complete, cover the bowl and allow the dough to continue fermenting. The fermentation time depends heavily on temperature and starter activity. Rather than relying on a specific number of hours, look for visual signs. The dough should become noticeably larger, smoother, and more aerated. You may see bubbles around the edges or underneath the surface. The dough does not necessarily need to double completely. A rise of roughly 50–75% can be enough, especially if the dough will continue fermenting during its final proof. Avoid allowing the dough to become severely over-fermented because over-proofed dough can be difficult to shape and may collapse during baking. Step 6: Divide the Dough Lightly flour your work surface. Gently turn the fermented dough out of the bowl. Use a bench scraper to divide the dough into two approximately equal portions. Try to avoid aggressively pressing all the air out of the dough. Keeping some of the fermentation bubbles helps create a lighter crumb. If you want perfectly equal loaves, use a kitchen scale to weigh the portions. Step 7: Shape the Loaves Working with one piece of dough at a time, gently flatten it into a rough rectangle. Fold the top portion toward the center, then fold the bottom portion upward. Roll the dough into a log, creating enough surface tension to help it hold its shape. Pinch the seam gently closed. Repeat with the second portion. The goal is not to create an elaborate artisan shape. You simply want a smooth, compact loaf that fits comfortably inside your loaf pan. Step 8: Place the Dough in the Pans Grease two loaf pans. Place one shaped loaf into each pan with the seam facing downward. The dough should sit comfortably inside the pan without being tightly compressed. Cover both pans with lightly greased plastic wrap, reusable covers, or a clean kitchen towel. Now comes the final proof. Step 9: Final Proof Allow the dough to rise at room temperature until it looks puffy and has risen noticeably above its original level. Depending on the temperature of your kitchen and the strength of your starter, this can take approximately 1½ to 4 hours. Again, the dough itself is a better indicator than the clock. Gently press the surface with a fingertip. If the indentation slowly springs back and the dough feels airy, the loaf is likely ready to bake. If it immediately springs back, it may need more time. If it feels extremely fragile and collapses easily, it may be over-proofed. Step 10: Prepare the Oven Toward the end of the final proof, preheat your oven to 400°F (200°C). Unlike traditional Dutch-oven sourdough, loaf-pan bread does not require complicated steaming equipment. If your oven tends to produce a dry crust, you can place a heatproof pan on a lower rack and carefully add hot water when the bread goes into the oven. This creates additional steam during the beginning of baking. However, it is optional. Step 11: Bake the Two Loaves Place both loaf pans into the preheated oven. Bake for approximately 35–45 minutes. The tops should become deeply golden brown. If the tops brown too quickly, loosely cover them with aluminum foil during the final portion of baking. The loaves should sound hollow when gently tapped, and the internal temperature should generally be around 195–205°F (90–96°C) when fully baked. Once baked, remove the pans from the oven. Step 12: Cool Completely Let the loaves rest in their pans for about 5–10 minutes. Then carefully turn them out onto a wire rack. Allow the bread to cool completely before slicing. This step is important. Although the bread smells irresistible when it comes out of the oven, cutting it immediately can compress the crumb and make the inside seem gummy. For the cleanest slices, wait until the loaves are completely cool. Why Loaf-Pan Sourdough Feels Easier One of the biggest advantages of this method is that it removes several stressful parts of traditional sourdough baking. You don't need to worry about a perfectly round boule. You don't need a banneton. You don't need to transfer dough into a blazing-hot Dutch oven. You also get consistent slices that are ideal for sandwiches. The loaf pan acts almost like a baking guide, keeping the dough contained while it expands. That makes this method particularly useful when you are still learning how sourdough behaves. Tips for Better Two-Loaf Sourdough Use an Active Starter A strong starter is one of the biggest factors affecting your final loaf. If your starter is sluggish, fermentation may take much longer. Watch the Dough, Not the Clock Temperature can dramatically change fermentation time. A warm kitchen may produce a faster rise, while a cool kitchen can slow everything down. Look for bubbles, volume, elasticity, and a puffy appearance. Don't Add Too Much Flour Sticky dough can tempt you to keep adding flour. Try to resist. Adding excessive flour can make the bread dense and dry. Instead, use slightly wet hands when handling the dough. Grease the Pans Well A well-greased loaf pan makes removing the finished bread much easier. Pay special attention to the corners. Give the Loaves Enough Space If your pans are small, avoid overfilling them. The dough needs room to expand during the final proof and baking. Make-Ahead Option You can prepare the dough ahead of time and use refrigeration to slow fermentation. After shaping and placing the dough into the loaf pans, cover the pans and refrigerate them. The cold environment slows the fermentation process and allows you to bake the bread at a more convenient time. When ready to bake, allow the dough to warm and continue proofing if necessary. Because sourdough fermentation varies, use the appearance and feel of the dough to determine when it is ready. How to Store Sourdough Loaves Once completely cool, store the bread in a bread bag, airtight container, or reusable bread storage bag. At room temperature, the loaves are best enjoyed within several days. Avoid refrigerating bread unless necessary because refrigeration can make bread stale more quickly. For longer storage, freezing is an excellent option. How to Freeze the Second Loaf This is where the two-loaf method becomes especially convenient. Allow the second loaf to cool completely. Wrap it tightly in plastic wrap or another freezer-safe wrapping material, then place it inside a freezer bag. Freeze for up to approximately 2–3 months for the best quality. You can freeze the loaf whole or slice it first. Slicing before freezing is convenient because you can remove only the number of slices you need. Serving Ideas This sourdough sandwich bread is incredibly versatile. Use it for: Turkey or chicken sandwiches Grilled cheese Avocado toast Peanut butter and banana toast Egg sandwiches French toast Breakfast toast Tuna salad sandwiches Garlic toast Buttered toast with jam The slightly tangy sourdough flavor works beautifully with both sweet and savory toppings. Frequently Asked Questions Can I use whole wheat flour? Yes. You can replace part of the bread flour with whole wheat flour. Keep in mind that whole wheat flour can produce a slightly denser loaf and may absorb more water. Can I use all-purpose flour? Yes, although bread flour generally provides stronger gluten development and a chewier structure. If using all-purpose flour, watch the dough consistency and avoid adding unnecessary extra flour. Why didn't my bread rise? The most common reasons include a weak starter, insufficient fermentation, a cool environment, or over-fermentation. Make sure your starter is active before beginning and give the dough enough time to develop. Can I make smaller loaves? Absolutely. You can divide the dough into three smaller portions if you have smaller pans. Adjust the baking time accordingly. Why is my bread gummy inside? Gummy bread can result from underbaking, cutting the loaf while it is still hot, or fermentation problems. Make sure the loaf is thoroughly baked and cooled completely before slicing. Recipe Summary Recipe: The Two Loaf Pan Sourdough Method Yield: 2 loaves Prep Time: 30 minutes Bulk Fermentation: Approximately 4–8 hours, depending on conditions Final Proof: Approximately 1½–4 hours Bake Time: 35–45 minutes Oven Temperature: 400°F (200°C) Difficulty: Beginner-friendly Final Thoughts The Two Loaf Pan Sourdough Method is a practical way to make homemade sourdough bread without feeling like your entire day revolves around baking. By using loaf pans, you get extra support during shaping, proofing, and baking. Dividing one batch into two loaves also makes the process more efficient and gives you a built-in backup loaf for later. The result is soft, flavorful sourdough bread with a tender crumb and beautiful golden crust. Keep one loaf on the counter for sandwiches and toast, and freeze the other for a future busy day. Once you get comfortable with this method, sourdough baking can become much more predictable, organized, and enjoyable. Instead of chaotic baking, you get two reliable homemade loaves from one straightforward batch of dough.
